Away from the beaches there is a wealth of history and culture to be found in the interior of the island and also in the ancient capital city of Eivissa (Ibiza Town). Situated in the south of the island, it is one of the best preserved medieval towns in Europe, and has been awarded historic status by UNESCO. Not to be missed sights include the 14th century cathedral of Santa Maria d’Eivissa at the top of the Old Town (Dalt Vila), and the lively town also has a great choice of restaurants and bars. Ibiza’s long and fascinating history dates from, 654BC, when it was discovered by the Carthaginians, then conquered by the Romans in 123BC, invaded by Moors in the 9th Century, and invaded and conquered by the Catalans. These influences have contributed to the island’s distinctive cuisine, which stems from the cultivation of farmland, hunting and fishing for centuries. Seafood features predominantly, together with lamb, and local goat’s cheese and herbs.
